I am obsessed with having a sweet treat after most meals. And during these fall months, you bet it is a pumpkin sweet treat. I try to make healthy-ish sweet recipes to keep in the freezer and enjoy at any time. These healthier chocolate chip pumpkin cookies sure do hit the spot!
These cookies are so easy to whip up and are made with simple, healthy ingredients. These chewy pumpkin chocolate chip treats truly melt in your mouth. These are the perfect freezer treat to grab whenever you want. Also, dip these delights in coffee in the morning, and you will be SOLD. Cookies for breakfast are something I can get behind :)

The goods:
1/4 cup melted and cooled coconut oil
1/3 cup pumpkin puree
1/4 cup coconut sugar
1 tbsp pure maple syrup
1 egg
2 tsps vanilla extract
1 1/2 cups almond flour
3 tbsps coconut flour
1/4 tsp baking soda
1 1/2 tbsps pumpkin pie spice
1/4 tsp salt
1/3 cup dark chocolate chips
Get to cooking:
Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
In a bowl, add the coconut oil, pumpkin puree, sugar, maple syrup, egg and vanilla extract. Mix until smooth.
Add in almond flour, coconut flour, baking soda, pumpkin pie spice and salt. Mix until a dough forms and let sit for 5 minutes.
Stir in chocolate chips.
Form small dough balls and bake for 8-10 minutes.
Let cool and enjoy :)
