Simple, healthy, good as heck. Easy dinner when you don't have much in your fridge!
The goods: · 4 Italian meatballs (cut in half) or chicken sausage
· 1 small sweet potato, chopped · 1/4 cup zucchini, chopped · 1/4 cup red onion, chopped · 1/4 cup peppers of choice, chopped · 1 egg · olive oil, garlic salt, pepper Get to cooking: 1. Preheat oven to 425℉ 2. Place ground sausage, chopped onion, sweet potato, peppers, zucchini on pan 3. Sprinkle with olive oil, garlic, and pepper and bake for 20 minutes 4. With 5 minutes left, fry egg 5. When finished baking, combine and enjoy :)
