This apple, quinoa, goat cheese chopped salad is a new favorite:)
If you are looking for a super quick week night dinner that is on the healthier side, this salad will do the trick. You can make this with any leafy greens that you have on hand and any type of apple. My favorite apple to put in is Fuji, for that extra sweet, tangy crisp.
I love meal prepping quinoa ahead of time and throwing it in salads throughout the week. Using Trader Joe's microwave organic quinoa could not make this any easier. Throw on some of your favorite mixed nuts and avocado for healthier fats. Don't skip the goat cheese either :) I usually top this with balsamic vinaigrette, but you could use any dressing of choice.

The goods:
1 cup cooked quinoa, I use Trader Joe's microwaveable
1 Fuji apple, chopped
1 avocado chopped
Handful of mixed nuts
Sprinkle of goat cheese
Balsamic vinaigrette
Get to cooking:
Microwave or cook quinoa.
Chop apple, greens, avocado and place in a bowl with mixed nuts and cooked quinoa. Top with goat cheese and balsamic vinaigrette.
