Simple, easy mornings with a side of balsamic and goat cheese avocado toast. I don't know if anything beats this. Sleeping in on the weekends and making an easy, tasty brunch at home is one of our favorite things to do.
This easy breakfast recipe for two is gluten free, low carb, and super simple to make. I used Trader Joe's cauliflower thins, but you could use your favorite carb loaded toast or low carb option. The world is yours!! It's packed with nutritious ingredients and keeps you feeling full for an action packed (or Netflix filled) Saturday afternoon.
The sweetness of the goat cheese and balsamic glaze topped with the saltiness of the creamy egg yolk is the perfect combination. I am obsessed!

Serving Size: two
The goods:
2 Trader Joes cauliflower thins
2 eggs
1 avocado
Handful of cherry tomatoes
Goat cheese
Balsamic glaze
Get to cooking:
Toast your bread of choice
Mash 1/2 avocado on each piece of toast
Chop cherry tomatoes in half and add to toast
Sprinkle goat cheese on avocado
Cook two eggs, sunny side up
Place eggs on top of toasts and drizzle balsamic glaze
