My favorite honey sriracha chicken is a week night staple! Sweet, tangy, and a little spicy- just how I like it :)
If you are looking for a super quick week night dinner, this honey sriracha chicken will hit the spot. You can make this with any vegetables that you are trying to use up, which is another great reason why I love it! I always make this with brown rice (Trader Joe's microwave organic brown rice) or a sweet potato. Gotta get the carbs, am I right?
Don't forget the cilantro on this bad boy.

Servings: 2
The goods:
1 cup brown rice
Red onion, chopped
Bell peppers, chopped
Broccoli, chopped
2 chicken breasts, chopped into small pieces
Fresh cilantro
1 1/2 tbsps honey
2 tbsps soy sauce
2 tbsp sriracha sauce
1 tbsp rice vinegar
1 tbsp sesame oil
2 tbsps olive oil
1 clove garlic
Get to cooking:
Preheat oven to 400 degrees
Chop all veggies and chicken
Bake veggies for 20 minutes
Make sauce: whisk together honey, soy sauce, sriracha, rice vinegar, sesame oil, and 1 tbsp olive oil
While baking, heat remaining 1 tbsp olive oil and garlic clove in a pan on medium heat
Toss sauce and chicken in the pan and cook, about 4 minutes on each side
Make rice: I buy Trader Joe's microwave organic brown rice
Top rice with chicken, veggies, extra sauce, cilantro, and sesame seeds
