This is the perfect summer dinner for two! This is one of those recipes that requires minimal effort and still tastes freaking amazing. My kind of meal, am I right? The key is to not over cook your salmon, leaving everything sweet, saucy, and juicy. The secret ingredient is mixing the bbq sauce with a fruity preserve. When this bakes, it is unreal and creates a sticky crust!
I love serving this with a side salad or my coconut cauliflower rice, which can be found here. It also would be good as a taco, which I may just have to try!

Serving Size: two
The goods:
2 salmon filets
1/4 cup bbq sauce of choice
1/4 peach or apricot preserves
1 mango
1 avocado
1/4 tsp garlic salt
1/2 lime wedge of lime juice
Handful of cilantro
Get to cooking:
Preheat your oven to 400 degrees
Mix bbq sauce and peach/apricot preserves
Spread fruity bbq sauce over salmon
Bake for 15-18 minutes
While baking, chop mango and avocado
Combine mango and avocado with garlic salt, lime juice, and cilantro
Once salmon is done, place mango, avocado salsa on top
