Simple, healthy, good as heck. BIG topping girl on this one!
The goods: · 1 butternut squash, peeled and chopped · 5 cloves garlic (or 1/4 cup minced garlic) · 1 white onion, chopped · 2 tbsp olive oil · 5 cups chicken broth · 1/2 cup heavy cream
· Italian sausage · Cheese tortellini
· Parmesan cheese
· Pepitas or croutons
· 1 tsp sage

Get to cooking:
1. Chop squash, onion, and garlic
2. Add olive oil, garlic, sage and onion into a large pot and sauté on medium heat for 5 minutes
3. Add butternut squash and Italian sausage and cook until soft, 15-20 minutes
4. Pour in chicken broth and simmer for 15 minutes until squash is tender
5. Add in cream and blend everything together
6. Simmer on low-medium heat and add in cheese tortellini
7. Top with croutons and fresh parmesan and enjoy :) Servings: around 8 (usually have about 3 bowls and freeze the rest for a later day)
