Simple, healthy, good as heck. Sage buttered, sweet potato gnocchi with chicken and veggies. Honestly could eat this for every meal.
The goods:
· 2 chicken breasts, cooked
· ½ cup chopped mushrooms
· ½ cup chopped tomatoes
· 1 tbsp parmesan cheese
· 1 cup Trader Joe’s sweet potato gnocchi
· 1 tbsp olive oil
· garlic, salt & pepper
· ½ cup arugula
Get to cooking:
1. Sauté mushrooms and tomatoes for 8 minutes in olive oil, season with garlic & pepper
2. Add sweet potato gnocchi with ¼ cup water into pan
3. Cook for 8 minutes, stirring everything occasionally
4. Add arugula and chopped, cooked chicken when gnocchi is almost done cooking, stir till wilted
5. Add parmesan on top and enjoy :)
