The goods:
1. 1/2 sweet potato, chopped
2. 3 pieces, microwave bacon
3. 6 cherry tomatoes
4. 1 tbsp olive oil
5. 1 egg
6. Handful of spinach
7. 1 tbsp parmesan cheese
8. Salt, pepper, garlic
Get to cooking:
1. Chop sweet potato into chunks and place in a olive oiled skillet on medium heat
2. Toss tomatoes and bacon in the skillet and season everything with salt, pepper and garlic
3. Cook tomatoes, bacon and potatoes for about 15 minutes, until soft
4. Make room in the center of your skillet for a small hole, and crack your egg in it. Cover and cook for 5 minutes
5. Top with spinach and parmesan
6. Enjoy :)
