Simple, healthy, good as heck. Roasted chicken fajita bowls, with cauliflower cilantro & lime rice. YES PLEASE.
The goods:
· 2 chicken breasts
· 1 bag frozen cauliflower rice
· 2 limes
· 1 cup chopped cilantro
· 1 red pepper
· 1orange pepper
· 1 yellow pepper
· 1 red onion
· 3 tbsp olive oil
· garlic, salt & pepper
Get to cooking:
1. Preheat oven to 425℉, spray baking sheet with non-stick spray
2. Cut and cover veggies with 1 tbsp olive oil, garlic, salt & pepper and place on baking sheet
3. Season chicken with 1 tbsp olive oil, garlic, salt & pepper
4. Place chicken on baking sheet with veggies.
5. Bake for 25 min @ 425℉
6. Simmer on low-medium heat cauliflower rice, cilantro, remaining olive oil, 1 squeezed lime, and garlic salt in a pan while chicken and veggies are baking
7. Assemble together and enjoy with guac on top :)
Servings: about 3-4 (depending on how hungry you are)
