Simple, healthy, good as heck. Tastes like fall for lunch! I like.
The goods: · 1 cooked chicken breast
· 3 cups kale · 1/2 an avocado · 1/2 cup cranberries or craisins
· 1 cup chopped sweet potatoes · 1 cup chopped brussel sprouts · 4 tbsp olive oil · Salt, pepper, garlic · Almonds (as many as you want) · Boathouse farms Avocado Green Goddess dressing Get to cooking: 1. Preheat oven to 425 ℉ and spray pan with non-stick 2. Season chopped brussels and sweet potatoes with 2 tbsps olive oil, salt, pepper, & garlic 3. Bake for 18 minutes 4. While baking, sauté kale in a pan with 2tbsp olive oil, salt & pepper (until desired softness) 5. When finished baking, combine kale with cranberries & avocado. Place veggies and chicken on the side and sprinkle with almonds 6. I like to add dressing on top, and enjoy :)
