Simple, healthy, good as heck. Peach, balsamic chicken with roasted potatoes. TO DIE FOR.
The goods:
· 2 chicken breasts
· 2 peaches, chopped
· 2 cups chopped potatoes
· 3 tbsp olive oil
· Garlic, salt & pepper
· 1 tbsp balsamic vinegar
· 2 tbsp honey (or agave)
· 1 tbsp basil seasoning
· 2 tbsp goat cheese
Get to cooking:
1. Preheat oven to 425℉
2. Place chopped potatoes and peaches in a large pan
3. Season chicken with 1 tbsp olive oil, garlic, salt, & pepper and place on top of peaches and potatoes
4. Mix together remaining olive oil, balsamic vinegar, honey, garlic, salt & pepper. Pour over chicken, potatoes, and peaches
5. Bake for 25 minutes
6. When finished sprinkle with basil and goat cheese
7. Enjoy :)
