Simple, healthy, good as heck. Parmesan, bruschetta chicken. GIMME THE NOODS.
The goods:
· 2 chicken breasts
· 1 cup broccoli
· 2 tbsp olive oil
· 2 tbsp balsamic vinegar
· 1 tbsp basil leaves
· ½ cup chopped tomatoes
· garlic, salt & pepper
· ½ cup whole wheat pasta
· 1 tbsp parmesan cheese
Get to cooking:
1. Preheat oven to 425 ℉
2. Season chicken and broccoli with 1 tbsp olive oil, garlic, salt, and pepper
3. Place chicken and broccoli on a pan and bake for 20 minutes
4. While baking, combine chopped tomatoes, olive oil, balsamic vinegar, basil, garlic, & pepper and mix in a bowl
5. While baking, cook ½ cup pasta
6. When done baking, place chicken on top of pasta and add bruschetta on top. Sprinkle with cheese and enjoy with broccoli :)
