I used to be obsessed with banana pancakes. They used to be my birthday dinner for a few years lol. These paleo, peanut butter banana pancakes aren't your grandma's butter and flour filled delicious cakes, but they are sooo tasty and are made with healthy, simple ingredients.
They are definitely a different consistency and not as sweet as regular pancakes, but they highly recommend. These pancakes do not make you feel like you are dragging after because they are filled with simple, healthy ingredients. They taste more doughy to me, which I actually prefer! And it's all about the toppings, am I right?
Perfect for a little staying in date brunch :)

Recipe for two (about 6 pancakes)
The goods:
1/4 cup coconut flour (I added 1-2 tbsp more if you like thicker batter)
1/4 tsp baking soda
2 tbsps peanut butter or almond butter
2 eggs
½ tbsp maple syrup
1 very ripe banana
¼ cup vanilla almond milk
1 tsp vanilla extract
Toppings: Karma Nuts toasted coconut cashews, extra banana, maple syrup
Recipe for two, about 6 pancakes Get to cooking:
Whisk eggs
Mash banana
Combine wet ingredients: eggs, banana, vanilla, peanut butter, maple syrup and almond milk
Combine dry ingredients: coconut flour and baking soda
Combine wet and dry ingredients
Cook pancakes on the stove, on medium heat for 3 minutes a side (or to your doneness liking)
Top with nuts, extra banana, and maple syrup. I topped with toasted coconut cashews from Karma Nuts, and it was AMAZING.
