Paleo, Gluten Free Sandwich Bread

This bread is the best thing to happen to my tastebuds. All the taste of normal bread, with minimal extra carbs. I think this loaf was gone in 48 hours :) Highly recommend toasting the bread!


The goods:

  1. 2 1/4 cups almond flour

  2. 1/4 cup chia seeds

  3. 5 eggs

  4. 1/2 tsp baking soda

  5. 1/2 tsp salt

  6. 1/2 tbsp honey

  7. 1 tbsp olive oil

  8. 1 tbsp apple cider vinegar


Get to cooking:

  1. Preheat oven to 350°F

  2. Combine the dry ingredients: almond flour, chia seeds, baking soda, and salt

  3. Combine the wet ingredients: eggs, honey, olive oil and apple cider vinegar

  4. Combine the wet and dry ingredients

  5. Place in a 9x5 inch greased bread pan and bake for 30-35 minutes. Check if the bread is done if a toothpick comes out clean. Let the bread rest for 30 minutes

  6. Keep in an air tight container in the fridge for up to 10 days

  7. Enjoy :)
