Makes 12 muffins
The goods:
1 cup fresh blueberries
2 tbsps lemon zest
1/4 cup lemon juice
2 eggs + 2 egg whites
1/4 cup honey
2 cups almond flour
1/4 cup coconut flour
1/2 tsp baking soda
1 tsp vanilla extract
1/3 cup coconut oil
Pinch of salt
Get to cooking:
Preheat oven to 350 degrees
In a mixing bowl, mix melted coconut oil, lemon juice, eggs, honey, and vanilla extract
Add in dry ingredients to the mixing bowl: almond flour, lemon zest, coconut flour, baking soda, and salt
Gently stir in blueberries
Line a muffin tray with liners and fill each muffin cup
Bake for 20 minutes, or until a tooth pick comes out clean
