Paleo, Gluten Free Blueberry Lemon Muffins

Makes 12 muffins

The goods:

  1. 1 cup fresh blueberries

  2. 2 tbsps lemon zest

  3. 1/4 cup lemon juice

  4. 2 eggs + 2 egg whites

  5. 1/4 cup honey

  6. 2 cups almond flour

  7. 1/4 cup coconut flour

  8. 1/2 tsp baking soda

  9. 1 tsp vanilla extract

  10. 1/3 cup coconut oil

  11. Pinch of salt

Get to cooking:

  1. Preheat oven to 350 degrees

  2. In a mixing bowl, mix melted coconut oil, lemon juice, eggs, honey, and vanilla extract

  3. Add in dry ingredients to the mixing bowl: almond flour, lemon zest, coconut flour, baking soda, and salt

  4. Gently stir in blueberries

  5. Line a muffin tray with liners and fill each muffin cup

  6. Bake for 20 minutes, or until a tooth pick comes out clean

  7. Enjoy:)
