Lemon Cookie Dough Balls

These little lemon balls of goodness are the perfect sweet treat to keep in the freezer! I find myself grabbing for one after lunch or dinner, when I need a little dessert. They are also packed with protein and keep you feeling satisfied.


To be honest I could probably eat all of these in one sitting, but I try to limit to 2 haha. Highly recommend using a food processor to make these. It really get's the texture smooth and blends everything together. They are so simple to make and packed with easy, healthy ingredients!

Lemon Cookie Dough Balls

Servings: Makes about 12 dough balls

The goods:

  1. 5 pitted dates

  2. 2 scoops Vital Protein Collagen Powder

  3. 1 & 2/3 cups almond flour

  4. 1/4 cup fresh lemon juice

  5. 1 & 1/2 tsp vanilla extract

  6. 1 tbsp lemon zest for topping

Get to cooking:

  1. Place everything, besides lemon zest, in a food processor. Pulse until combined

  2. Roll mixture into small dough balls

  3. Top with lemon zest

  4. Freeze and enjoy :)

I keep these in the freezer for about a month!
