These little lemon balls of goodness are the perfect sweet treat to keep in the freezer! I find myself grabbing for one after lunch or dinner, when I need a little dessert. They are also packed with protein and keep you feeling satisfied.
To be honest I could probably eat all of these in one sitting, but I try to limit to 2 haha. Highly recommend using a food processor to make these. It really get's the texture smooth and blends everything together. They are so simple to make and packed with easy, healthy ingredients!

Servings: Makes about 12 dough balls
The goods:
5 pitted dates
2 scoops Vital Protein Collagen Powder
1 & 2/3 cups almond flour
1/4 cup fresh lemon juice
1 & 1/2 tsp vanilla extract
1 tbsp lemon zest for topping
Get to cooking:
Place everything, besides lemon zest, in a food processor. Pulse until combined
Roll mixture into small dough balls
Top with lemon zest
Freeze and enjoy :)
I keep these in the freezer for about a month!
