The goods: · 2 bunches of kale · garlic, salt, pepper · 1 chicken breast · 1/4 cup parmesan cheese
· handful of shaved almonds · 2 tbsps bacon bits · 1 tbsp honey dijon · 1 tbsp olive oil · 1 tbsp apple cider vinegar
· 1/4 an avocado
_____________________ Get to cooking: 1. Cook chicken breast in the pan. I like to cut it in tiny chunks and season with salt, pepper, and garlic. Sear the chicken about 4 minutes on each side. 2. After chicken is done, set aside. Sauté kale in the pan until wilted down. About 5 minutes 3. Combine honey dijon, olive oil, and apple cider vinegar for dressing 4. Combine kale, chicken, avocado, parmesan, almonds, bacon and dressing 5. Enjoy :)
