Simple, healthy, good as heck. Baked, honey balsamic chicken with roasted veggies. YUM.
The goods:
2 chicken breasts
1 cup chopped broccoli
1 cup chopped potatoes
3 tbsp olive oil
Salt & pepper
1 tbsp balsamic vinegar
2 tbsp honey (or agave)
1 tbsp Italian seasoning
1/2 of a lemon
Get to cooking:
Preheat oven to 425℉, spray baking sheet with non-stick spray
Cover veggies with 1 tbsp olive oil, salt & pepper and place on baking sheet
Mix remaining olive oil, balsamic vinegar, honey, lemon juice, Italian seasoning in a bowl
Place chicken on baking sheet with veggies. Cover chicken with honey, balsamic sauce. Pour remaining over veggies
Bake for 25 min @ 425℉
Enjoy, you will want to scrape the pan :)
Servings: about 3-4 (depending on how hungry you are)
