Healthy Taco Salad

The easiest weeknight dinner recipe!


The goods (serves 2):

  1. 1/2 pound of ground beef (I usually buy1 lb and freeze half)

  2. 1/2 packet of taco seasoning of choice

  3. Drizzle of primal kitchen’s ranch

  4. 1 cup chopped cherry tomatoes

  5. 1 cup chopped zucchini

  6. 1 red or orange pepper chopped

  7. 1/2 cup yellow onion chopped

  8. Guacamole

  9. 2 cups spring mix lettuce

  10. Fresh cilantro

  11. Olive oil


Get to cooking:

  1. Have two skillets ready on the stove, with olive oil on medium heat

  2. In one skillet, place chopped tomatoes, zucchini, pepper, and onion. Sauté covered on medium heat for about 15 minutes. I sprinkle a little of the taco seasoning pack over these

  3. In the second skillet, brown ground beef. Drain excess grease and pour in 1/2 of the taco seasoning pack. Add in 1/4 cup water. Simmer on low for about 5 minutes

  4. Place veggies over lettuce, top with ground beef, guac, ranch, and fresh cilantro

  5. Enjoy :)
