Simple, healthy, good as heck. Hawaiian pork, sweet potato bowl. YAS.
The goods:
· ½ lb pork roast
· 1 can pineapple juice
· 1 sweet potato
· 2 tbsp olive oil
· garlic, salt & pepper
· ¼ cup guacamole
Get to cooking:
1. Place pork in the crockpot with can of pineapple juice on medium for 4 hours, shred
2. Scrub and bake sweet potato in the microwave for about 4-6 minutes (or until tender)
3. Pour olive oil, garlic, salt and pepper on potato
4. Place Hawaiian pork on top
5. Add guac and enjoy :)
Servings: 1-2 (depending on how hungry you are)
