Simple, healthy, good as heck. Garlic & herb tilapia, with cilantro & lime cauliflower rice and mango salsa. Shit, that’s fresh.
The goods:
· 2 garlic & herb tilapia filets (I bought them seasoned)
· 1 bag frozen cauliflower rice
· 2 limes
· 1 cup chopped cilantro
· 2 tbsp olive oil
· garlic, salt & pepper
· 1 mango
· ½ red pepper
· ½ red onion
· ½ avocado
Get to cooking:
1. Preheat oven to 400℉, spray baking sheet with non-stick spray
2. Chop mango, red pepper, and onion into small pieces
3. Combine mango, red pepper, onion, ½ cup cilantro, and 1 squeezed lime for mango salsa. Set aside
4. Bake tilapia for 10 minutes once preheated
5. Simmer cauliflower rice, ½ cup cilantro, olive oil, 1 squeezed lime, and garlic salt in a pan on low-medium heat while tilapia is baking
6. Place baked tilapia over cauliflower rice and enjoy with mango salsa on top :)
