Simple, healthy, good as heck. Chunky Chili. SO DANG GOOD.
The goods:
· 1 lb ground beef or turkey
· 5 cloves garlic (or 1/4 cup minced garlic)
· 1 red onion
· 2 tbsp olive oil
· 1 package chili seasoning
· 2 cans 14.5 oz. oven roasted, diced tomatoes
· 1 can 6 oz. tomato paste
· 1 can 15.5 oz. kidney beans
· 1 can 15.5 oz. black beans
· 2 cups chicken broth
· 4 pieces of cooked bacon
· Extra add ins of your choice: avocado, cilantro, sour cream, cheddar cheese, elbow macaroni noodles
Get to cooking:
1. Chop bacon, garlic and onion into small pieces
2. Add olive oil, garlic, and onion into a pan and sauté on medium heat for 8-10 minutes
3. Add ground beef/turkey with garlic and onions and cook on medium heat until browned. I usually add half of the chili seasoning pack while browning as well
4. While browning meat, add diced tomatoes, tomato paste, chicken broth, kidney beans, black beans, chopped bacon and the rest of the chili seasoning pack into a large pot and simmer on low-medium heat
5. Once meat is cooked thoroughly, add garlic, onion, and meat into pot and stir everything together
6. Simmer on low-medium heat for 60 minutes (stirring occasionally)
7. Decide on your extra add-ins and enjoy :)
Servings: around 8 (usually have about 3 bowls and freeze the rest for a later day)
