Simple, healthy, good as heck. Chicken sausage and quinoa stuffed squash. Definition of fall.
The goods:
· 1 delicata squash
· 1 pack vegetable quinoa ( I got mine from trader joes)
· 1 pack chicken sausage (I got spinach and feta stuffed)
· 2 tbsp olive oil
· garlic, salt & pepper
· 2 tbsp havarti cheese (or your favorite)
Get to cooking:
1. Preheat oven to 400℉
2. Cut delicata squash in half long ways, scoop out guts & seeds
3. Cover inside and outside of squash with garlic, salt & pepper
4. Place hallow side of squash face down and cook for 15 minutes, flip to other side and cook another 5 minutes
5. While squash is baking, microwave quinoa and cut sausage into chunks and fry in a pan
7. Remove squash and place quinoa and sausage inside, add favorite cheese on top
8. Bake for an additional 10 minutes
9. Enjoy :) You can eat every part of the squash, including skin!
