Simple, healthy, good as heck. Chicken carbonara, spaghetti squash. Brb drooling.
The goods:
· 2 chicken breasts
· 1 spaghetti squash
· 1 cup halved grape tomatoes
· 3 pieces of cooked bacon
· 4 tbsp Boathouse Farms Caesar Greek yogurt dressing
· 2 tbsp olive oil
· garlic, salt, pepper, Italian seasoning
Get to cooking:
1. Preheat oven to 425℉
2. Cut spaghetti squash in half (long-ways) and scoop out all seeds and guts
3. Cover inside of spaghetti squash with olive oil, garlic, salt, pepper, & Italian seasoning
4. Turn spaghetti squash facing down on pan and bake for 40 minutes
5. Season chicken with garlic and pepper and bake with 20 minutes left of squash time
6. Chop tomatoes in half and chop bacon into chunks while cooking
7. Remove chicken and squash from oven.
8. Chop chicken into chunks
9. Once a little cooler, use a fork to scrape spaghetti squash from shell and place shells aside
10. Place squash, chicken chunks, tomatoes, and bacon in bowl. Pour caesar dressing over everything and mix together
11. Place mixture back in shells and bake for 10 minutes at 425℉
12. Remove from oven and enjoy :)
Servings: 4-5 (depending on how hungry you are)
