The goods: · 4 tbsps goat cheese · 4 eggs · 6-8 slices of bacon · 1 chopped sweet potato · 1 cup chopped mushrooms
· 1 cup spinach
· Salt, pepper, and garlic
_____________________ Get to cooking: 1. In a pan, cook bacon about half way done 2. Add in sweet potatoes, mushrooms, and salt, pepper and garlic 3. Cover and cook until veggies are soft, about 15 minutes on medium heat 4. Add in spinach and let wilt 5. Add in 4 eggs and cover until cooked (white) 6. Top with goat cheese and enjoy :)
