The goods: · 2 zucchinis · 1 lb ground beef (80/20)
· 1 pack taco seasoning mix
· 1/2 yellow onion, chopped · 1 10z can enchilada sauce . 1/2 cup cheese · 1 tbsp greek yogurt (or sour cream) · 1/2 cup tomatoes, chopped · cilantro Get to cooking: 1. Preheat oven to 400℉ 2. Brown ground beef with chopped onion in pan, add taco seasoning 3. While browning meat, use a vegetable peeler to peel zucchinis into long, thin slices (about 1 inch wide, length of zucchini,) 4. Once zucchinis are peeled and meat is browned, place about 4-6 zucchini slices next to each other, overlapping just a bit. Place meat in the center, and role slices into enchilada form 5. Place enchiladas into baking dish, and cover with 1/2 can of enchilada sauce and chopped tomatoes 6. Sprinkle with cheese and bake for 15 minutes 7.
