Thai Peanut Chicken over Coconut, Cauliflower Rice

The goods:

Chicken:

1. 2 chicken breasts

2. Olive oil

Thai peanut sauce:

1. 1/2 cup natural creamy peanut butter

2. 3.5 tbsp low sodium soy sauce

3. 1 tbsp rice vinegar

4. 2 tbsp lime juice

5. 3 tbsp water

6. 1/2 tsp ground ginger

7. 1/4 tsp garlic powder

Coconut cauliflower rice:

1. 1 12oz bag frozen cauliflower rice

2. 1/2 cup lite coconut milk

3. Garlic salt

4. 2 tbsp olive oil

5. 1/2 lime

6. Cilantro


Get to cooking:

1. Make sauce: mix all ingredients-peanut butter, soy sauce, rice vinegar, water, ginger, lime juice. Add water if too thick

2. Make rice: In a pan, heat olive oil and frozen cauliflower until soft. Add in garlic salt, juice of 1/2 lime, coconut milk and simmer on medium until absorbed into the rice (about 5 minutes)

3. Cook chicken: Cut into chunks and sear on medium heat in olive oil until done, about 5 minutes each side

4. Add in about 1/4 cup of peanut sauce to the chicken and simmer on low until thick, about 5 minutes.

5. Serve chicken over rice and top with fresh cilantro.

6. Enjoy :)
