Pineapple, Pork Tacos

The goods: · 1 2-3lb pork loin · 1 tbsp garlic · 1 tbsp pepper · 1/4 cup green onions · 1/4 cup red onions · cilantro

· 1 can 20oz pineapple chunks in juice · 2 can 6 oz. pineapple chunks · 1/4 cup soy sauce · 5 tbsp apricot preserves · 2 tbsp lime juice · 3/4 cup ketchup · tortillas of choice · goat cheese Get to cooking: 1. Place pork loin in crock pot (cut into 4 chunks), season with garlic and pepper 2. In a bowl, combine 20 oz can pineapple chunks and juice, 2 tbsp apricot preserves, and 1/4 soy sauce. Pour over pork in crock pot 3. Cook pork on high for 4 hours, shred, and finish cooking on low for 30 minutes Sauce 1. Add 3 tbsp apricot preserves, 3/4 cup ketchup, 1 6 oz can pineapple chunks, and 2 tbsp lime juice to blender and puree Tacos 1. Place shredded pork, sauce, pineapple chunks, green onion, red onion, cilantro and goat cheese on tortillas 2. Enjoy :)
