Ingredients:
1. 2 large chicken breasts, cooked & shredded
2. 1 container@wundercreameryplain Greek yogurt
3. 1 package@fronterafoodsred chile enchilada sauce
4. 1 cup shredded cheddar cheese
5. 1 cup red pepper, green pepper, onion mix (I bought the pre-cut fajita veggies)
6. 10 small corn tortillas
7. Cilantro

Instructions:
1. Preheat oven to 400℉
2. In a pan, sauté fajita veggies in olive oil until soft, about ten minutes
3. Once sautéed, mix shredded chicken, Greek yogurt, veggies, 1/3 cup enchilada sauce, and 1/2 cup cheese
4. Spread a little enchilada sauce in your baking dish
5. Stuff tortillas with enchilada mixture and roll. Place in your baking dish
6. Spread remaining sauce and cheese on top of rolled enchiladas
7. Bake for 20 minutes
8. Top with fresh cilantro
9. Enjoy :)
