Coconut, cauliflower rice is the easiest side dish. Throw in some shrimp or chicken and make it dinner too 🥥

The goods:
1. 1 12oz bag frozen cauliflower rice
2. 1/2 cup lite coconut milk
3. Garlic salt
4. 2 tbsp olive oil
5. 1/2 lime
6. Cilantro

Get to cooking:
1. In a skillet, heat olive oil and frozen cauliflower until soft. Add in garlic salt, juice of 1/2 lime, coconut milk and simmer on medium until absorbed into the rice (about 5 minutes).
2. Top with fresh cilantro. Throw in your fav protein or serve as a side.
