The goods:
1. 3-4 chicken tenderloins
2. 1/2 cup pistachios, crushed
3. 3-4 tbsps fig jam
4. 4 tbsps goat cheese
5. Salt and pepper
6. Cauliflower mashed potatoes
7. Olive oil
Get to cooking :
1. Preheat oven to 425℉
2. Dip chicken tenderloins in olive oil and cover in pistachio crumbs, salt and pepper
3. Place goat cheese chunks on chicken and bake for 20 minutes
4. While baking, make cauliflower mashed potatoes to package directions
5. After baking, drizzle chicken with fig jam
6. Enjoy :)
